Entrée: Milk Rice with Chicken & Cashew Curry

  • Ingredients:
    • (For Serves 5) 8oz bag of rice 5 of
    • 13.5 oz cans of coconut milk
    •  2lbs of chicken breast
    • 3tsp ginger
    •  ½ lb of tomato
    • 2tsp garlic
    •  ½ tsp cardamom
    • 1/2 tsp of fenugreek
    •  ½ tsp of mustard seeds
    • 2 tsp turmeric
    • 1/3lb onions
    •  Curry leaves
    •  2 tsp chili powder
    •  4 tsp curry powder
    • 2 limes
    • 1 cup  Coconut oil
    • 2 cup cashew
    • 1/2 cup butter
    •  1/4 raisins
    • 1/2 cup yogurt
    •  2lbs of Shrimp
  • Recipe:
    • Milk rice:
      • Cook rice per instructions on the package.
      • When rice is cooked well, add coconut milk and salt. 
    • Chicken curry:
      • Cut the chicken into bite-size pieces.
      • Marinate the chicken pieces in a mix of yogurt, chopped garlic and ginger, turmeric powder, chili powder, curry powder, and salt.
      • Stir fry the marinated chicken in coconut oil. Fry chopped onions in butter and add chopped ginger and garlic, curry powder, and turmeric powder.
      • Then add tomato puree and chili powder onto the mix of fried onions.
      • Then, add coconut milk and bring it to boil. Finally, add the stir-fried chicken and curry leaves into the gravy. spicy tempered onion with shrimp: Slice the onions.
      • Add coconut oil to a pan and add curry leaves and sliced onions when the oil is hot.
      • When the onions are well-tempered, add salt, pepper, turmeric powder, chili powder, and shrimp mix well and let stand for a few minutes.
    • Cashew curry:
      • Boil raw cashew nuts in water with turmeric for 10 minutes and drain. Fry mustard, curry leaves, garlic, cinnamon, green chili, and onions in coconut oil.
      • When the onion is tempered, add a little fenugreek. Add some water and then curry powder and turmeric powder.
      • Add coconut milk and bring to boil.
      • Finally, add cashew, salt, and pepper to the taste, mix well and let stand for a few minutes.

  • Recipe:
    • Add black tea and crushed ginger into boiling water
    • Let stand for 10 min. Filter it into a new container
