Sapori, A New Variety of Tastes

Eastway Dining is welcoming a brand-new station designed to do more than serve food. Sapori, inspired by Italian cuisine and culture, was created to turn everyday meals into a full-flavored, creative experience.

"Sapori" is an Italian word meaning "flavors" or "tastes." It's often used in the culinary world to describe the richness and variety of Italian cuisine. 

According to Aubrey Paulson, university executive chef, Sapori’s vision began with a desire to offer something different. The team wanted a concept that felt “vibrant and full of flavor,” eventually landing on Italian cuisine for its warmth, tradition, and versatility.

Kent State students, faculty, and staff are invited to experience Sapori firsthand during its grand opening on Monday, Feb. 2, from noon to 2 p.m. at Eastway Dining. Enjoy samples of dishes from the new station, along with music and giveaways.

The Aesthetic

To achieve this vision, Tisa Manandhar, a graduate assistant in the Division of Student Life, led the creative direction, visual storytelling, and station design. Her inspiration drew on the essence of Italian cooking mentioned earlier: warm, comforting, and rooted in tradition. The goal was to create an atmosphere where students could almost see the flavor of Italy. More than just branding, the design was meant to transform the space, making Sapori feel like a destination within Eastway rather than just another counter. Moreover, the logo's flowing script was inspired by handwritten recipe cards and the swirl of wine in a glass, giving Sapori a refined yet human touch.

The Menu

Regarding the menu, Aubrey Paulson, university executive chef, notes that it goes well beyond typical expectations of campus Italian food. Instead of just pasta with marinara or Alfredo, Sapori introduces students to bold, globally inspired dishes such as arancini di riso, a beloved Sicilian street food. These crispy, deep-fried rice balls served with marinara are designed to “rival any other street food from across the world,” giving students the chance to explore authentic flavors right on campus.

Sapori is about more than what’s on the plate; it’s about the experience. Culinary Services leaders say Kent State students want meals that feel intentional, elevated, and memorable. With that in mind, Tisa Manandhar hopes the station’s design and atmosphere offer students a brief moment of escape, helping them feel welcome and comfortable. Sapori reflects how Kent State Culinary Services works every day to make an impact on students’ lives, showing how thoughtful design can elevate even a quick meal.
