This two-day wine chemistry workshop will leave attendees feeling more confident in running laboratory analysis during the various stages of the wine-making process. Attendees will expand their lab skills through hands-on exercises using a variety of analytical technologies. This workshop will be held in Kent State Ashtabula’s state-of-the-art chemistry lab. 

Workshop topics include: Utilizing Paper Chromatography to Monitor Malolactic Fermentation, Utilizing Refractometry to Determine Soluble Solids and Sugar per Berry, Measuring Hydrogen Ion Concentration, Utilizing Formol Titration to Estimate YAN, Reducing Sugar by Visual Rapid Estimation, Completing Ebulliometric Analysis, Utilizing Various Methods for Analysis of Sulfur Dioxide, and Utilizing a Cash Still to Determine Volatile Acid.

Join Ed Trebets, award-winning winemaker and Kent State University at Ashtabula Enology Lecturer.  

Trebets had over 13 years industry experience as a commercial winemaker when he joined the Kent State Ashtabula faculty in 2016 as the lead instructor for enology coursework and the director of the Wine Degree programs.  Prior to entering the wine industry, Trebets taught honors high school chemistry for seven years.

In his tenure as a winemaker, he was awarded more than 950 medals: 200 gold and double gold, numerous silver and bronze medals, and 14 Best of Show for his wines in competitions ranging from the Great Lakes Wine Competition and the Finger Lakes International to the Florida State Fair and the Los Angeles County Fair. Trebets also was the winemaker for Debonné’s 2013 Vidal Blanc Ice Wine that won the 2015 San Francisco Chronicle wine competition for best dessert wine.
